Warm French toast with summery peach compote

Maple French Toast with Peach Compote

  • 2 slices of challah bread
  • 2 large eggs
  • 1 tsp of maple syrup
  • 1/2 tsp of ground cinnamon
  • 1/8 cup of milk ((any type))

Peach Compote

  • 1 large, yellow peach
  • 1/8 cup of water
  • 1/4 tsp of ground nutmeg
  • 1/8 cup of packed, light brown sugar
  1. Chop peach into small chunks.  To prepare peach compote, combine peaches, brown sugar, water, nutmeg, and cinnamon in medium saucepan over medium heat.  Cook until the liquid is reduced to a medium-thick syrup, which takes about 15 minutes.
  2. Whisk eggs, milk, and maple syrup in a wide bowl.  Place bread slices in egg mixture, and then cook each side on a griddle over medium-low heat for about 2 to 3 minutes.
  3. Remove slices from heat, and garnish with the peach compote, whipping cream, and a mint leaf.  This is the ultimate breakfast indulgence.  Enjoy!
