Baked Banana Oat French Toast (+ video)

Personal-size French toast with tons of banana flavor!

Baked Banana Oat French Toast

  • 2 slices of challah bread
  • 2 large eggs
  • 1/4 ripe banana, mashed
  • 1/8 cup of milk
  • 1 tsp of maple syrup
  • 1/2 tsp of ground cinnamon
  • 1/4 cup of rolled oats
  1. Preheat oven to 350?F. Grease ramekins with butter or nonstick cooking spray.
  2. Cut challah bread into cubes, and in a large bowl, whisk together eggs, milk, maple syrup, cinnamon, and the mashed banana.
  3. Add oats and cubed bread to egg mixture, and mix together genly.
  4. Spoon about 3 tbsp of french toast mixture into each ramekin, and add a few slices of banana to each ramekin.
  5. Bake french toast for 15 minutes or until tops are slightly golden brown. Top with additional fresh banana, and enjoy warm!
