Pasta at Home.

Choose Your Flour Carefully

One of the most important decisions you need to make is what flour you are using, and this is something that you really do need to be careful with. After all, it is something that will end up making a huge difference to the quality of the finished product, and you should therefore make sure that you are choosing wisely. Most people go for 00 Pasta Flour, but you might want to mix in a little semolina as well for that perfect texture. You should certainly avoid higher-gluten flours like bread flour at all costs.

Rest The Dough

After your have made your dough, you should make sure to rest it for around half an hour before doing anything else to it, and certainly before you try to roll it out. That’s because it is going to have a much better texture and springiness to it if you put it into the fridge for 30 minutes first. It’s a simple case of wrapping it in cling film and then putting it away in the fridge for half an hour. Then you are ready to use it as necessary for whatever dish you are putting together.

Remember The Sauce

Pretty much every pasta dish in the world has a sauce of some kind or other, and in truth this is just as important as the pasta itself. In traditional Italian pasta meals, the sauce is relatively minimal, because the pasta itself is expected to be the hero. So you should aim for a sauce which is subtle and not overpowering, but still delicious. In any case, it’s an important part of the whole dish.
