A perfect early spring appetizer

This appetizer/side dish is super easy to prepare and is perfect to serve at your Easter table.

Roasted Salami-Wrapped Asparagus.

  • 1 pound asparagus, washed and one inch of ends chopped off
  • 2 cloves garlic, halved
  • 1/2 pound genoa salami
  • 1/4 cup walnuts, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 sprigs oregano, chopped
  • 2 teaspoons sage, chopped
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Wrap two slices of salami around each asparagus sprig, securing each with a toothpick. Add the asparagus to the baking sheet along with the halved garlic cloves. Sprinkle over walnuts, and drizzle everything with olive oil. Top with paprika, salt, pepper, oregano, and sage.
  3. Roast asparagus for 20-25 minutes or until they are slightly crispy and the salami is firm. Enjoy fresh!
