Herb-y potatoes with a soft, fluffy interior and crispy exterior

If it’s a bit colder outside and you feel like turning on the oven, these Herb Roasted Fingerling Potatoes are for you.

Packed with a bunch of summer flavors from the fresh and dried herbs, these potatoes are sure to please practically anyone, even picky eaters. Feel free to add fresh chopped chives on top for added crunch and color! This potato side dish is best paired with a grilled meat, such as steak, chicken, or pork, and it may sound crazy, but they are even tasty inside a pita or taco! With a refreshing punch to wash everything down, you have a complete barbecue meal.

Herb Roasted Fingerling Potatoes.

  • 2 pounds fingerling potatoes
  • 3 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons fresh oregano, chopped
  • 2 teaspoons fresh basil, chopped
  • 1/2 teaspoon paprika
  • 1 teaspoon dried or fresh dill
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  1. Preheat oven to 400 degrees F. Add all ingredients to a large plastic bag, seal, and shake until all the potatoes are evenly covered in oil and herbs. Place all the potatoes on a cookie sheet, and roast for 20-25 minutes or until potatoes are soft and tender. Serve, and enjoy!
