Double Berry Puff Pastry Galettes.

A show-stopping dessert that comes together in less than half an hour

This should be your go-to dessert if you are ever stumped as to what to make and need a dessert to come together in no time. These Double Berry Puff Pastry Galettes require minimal ingredients and can either be made personalized or party-size!

I love personal-size desserts because they are so easy to serve and distribute and they are portion control. Double berry – double win!

Double Berry Puff Pastry Galettes.

  • 6 cups fresh strawberries, stems removed
  • 2 cups fresh blueberries
  • 2 tablespoons apricot jam plus 2 teaspoons water
  • 2 sheets puff pastry, cut in half
  • 1 large egg plus 1 teaspoon water ((egg wash))
  • Vanilla ice cream or whipped cream ((optional))
  1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper. Set aside.
  2. Slice the strawberries thinly, about 1/8-inch thick. Set aside. In a small bowl, mix the apricot jam and water to make the apricot glaze. Also set aside.
  3. On a well-floured surface, roll out each half of the puff pastry (four half-sheets in total) until about 1/4-inch thick. Arrange sliced strawberries in a circular pattern to resemble a flower and blueberries to the center of the strawberry “flower” (you can arrange the berries however you want), leaving a 1-inch border of dough. Fold the border over the top of the galette to form a circular tart. Brush apricot glaze on top of fruit. Brush egg wash on top of the “dough border”, and sprinkle demerara sugar on top of border.
  4. Bake galettes for 10-15 minutes or until the edges are golden brown. Serve with vanilla ice cream or whipped cream, and enjoy!
