My favorite muffins of all time

You must try putting coffee in muffins. It is life-changing.

These muffins have definitely become my favorite muffins (or even cupcakes) of all time. They are soft, fluffy, and have just the right amount of coffee flavor. In other words, they are truly unbeatable.

I mean, who doesn’t love some extra coffee in their treats? Ever since I was younger, I always loved the smell and taste of coffee. In fact, fresh-brewed coffee is probably one of my favorite smells of all time. There’s just something about the smell that is so soothing and makes me want to have a giant vanilla latte.

Cappuccino Chocolate Chip Muffins.

  • 3/4 cup hot water
  • 3 tablespoons instant coffee or espresso powder
  • 1/4 cup milk ((any type))
  • 2 large eggs
  • 1 cup white, granulated sugar
  • 3/4 cup canola or melted coconut oil
  • 2-1/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 cup semisweet chocolate chips
  1. Preheat oven to 350 degrees F. Line a muffin tin with liners. Set aside.
  2. Allow instant coffee or espresso powder to dissolve in hot water. Stir in milk. Set aside.
  3. In a large bowl, whisk together eggs, sugar, and oil.  Whisk in coffee mixture. Fold in flour, baking powder, salt, and cinnamon until well combined, but do not overmix. Fold in chocolate chips.

  4. Fill each muffin liner until about 3/4 of the way full. Bake muffins for 15-17 minutes or until a toothpick inserted in the center comes out clean. Serve warm, and enjoy!
