A healthy salad is coming your way today. I love the combination of berries and spinach. The sweet yet tart flavor of the berries brings out the mild spinach flavor in the best way possible.

Roasted Berry Poppy Seed Spinach Salad.

  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, chopped
  • 1 cup fresh blackberries
  • 5 cups fresh baby spinach
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon salt
  1. Preheat oven to 400 degrees F. Add blueberries, strawberries, and blackberries to large baking sheet. Roast berries for 15-20 minutes until their juices have been released. Allow to cool completely.
  2. Toss spinach with olive oil, vinegar, poppy seeds, salt, and berries. Enjoy fresh!
