Happy January!

Welcome to the first day of 10 Days of Healthy! To kick off January, in my mind, a month of healthy recipes so you can get yourself out of that unhealthy food coma from the holidays, I am sharing this recipe for Roasted Cauliflower Steak and Crispy Chickpea Grain Bowl with you. It’s an incredibly easy, healthy, hearty lunch for when you just want to relax on the weekends or meal plan for the rest of your busy week.

So where do I start? First off, I want to confess and mention that I ate the ENTIRE head of cauliflower in this recipe. I roasted it up just as it says in the written recipe down below, photographed the bowl, and then ate all the cauliflower. I don’t regret one bit of it because it’s healthy! 🙂 (right?)

Roasted Cauliflower Steak and Crispy Chickpea Grain Bowl.

  • 1 head cauliflower, cut into slices
  • 1 cup chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground paprika
  • 1 cup quinoa, cooked
  • 1 cup brown rice, cooked
  • 1/2 teaspoon salt
  1. Preheat oven to 450 degrees F. Add cauliflower steaks and chickpeas to a large baking sheet. Drizzle on olive oil, cayenne pepper, cumin, salt, black pepper, and paprika. Roast for 25-30 minutes or until cauliflower and chickpeas are golden, and chickpeas are crispy.
  2. Add salt to cooked quinoa and brown rice, and divide between two bowls. Add cauliflower and chickpeas on top of grains, and EAT!
