Banana Cinnamon Muffins.

  • 1/2 cup of canola or vegetable oil
  • 2 eggs
  • 2 large, very ripe mashed bananas
  • 1 tsp of vanilla extract
  • 2/3 cup of sugar
  • 1-2/3 cups of All-purpose or Self-rising flour
  • 1 tsp of baking soda
  • 1 tbsp of ground cinnamon
  • 1/2 tsp of salt

Topping

  • 1/8 cup of melted butter or margarine
  • 2 tbsp of white, granulated sugar
  • 1 tbsp of cinnamon
  1. Preheat oven to 350?F.  Place cupcake liners in tin or spray tin with nonstick spray.
  2. In a standing mixer fitted with a paddle attachment, beat eggs, oil, and sugar until creamy.  Once creamy, beat in vanilla and bananas.
  3. Mix in flour, salt, baking soda, cinnamon, and salt until fully incorporated.  Pour batter in muffin cups.
  4. Bake muffins for 15-20 minutes or until toothpick inserted in center comes out clean.
  5. In a separate, small bowl, mix sugar and cinnamon.  Smear melted butter over muffin tops, and sprinkle cinnamon-sugar mixture.  Serve and enjoy!
